Most vegetarians use the sauce to eat rice in place of stew, they use the vegetable sauce to eat spaghetti, boiled yam, boiled potatoes, boiled plantain, and boiled macaroni, etc. when it is properly prepared, you may choose vegetable sauce as a choice to eat any of the mentioned foods instead of stew prepared with tomatoes.
Due to its appealing appearance and possible health benefits, some people are developing an interest in using vegetable sauce as a choice of stew. However, the challenge of preparing it remains the major obstacle because the majority are yet to understand how to prepare a special and delicious vegetable sauce that can challenge the taste of tomatoes stew.

Assuming you are preparing the vegetable sauce for boiled white rice because you want to use it instead of stew, then you need to follow these steps to achieve it.
First, boil the white rice until it is completely cooked. Do not forget to add the required quantity of salt into the rice while boiling it. When the rice is ready for consumption bring it down from the stove and initiate the preparation of the vegetable sauce.
The next thing is to start the preparation of the vegetable sauce. By that, starts by getting all the ingredients ready. Here are ingredients you will need: Onions, spicy pepper, sweet peppers of three different colours, carrots, black pepper, vegetable oil or groundnut oil, spinach leaves or Pumpkin leaves, salt, I cube of knorr, and crayfish.
Slice your onions about 3 pieces of medium size
Slice one big spicy pepper
Slice 3 sweet peppers that have different colours in each one
Slice one or two big carrots
Grind your crayfish about half of a milk tin
Slice the spinach leaves or the pumpkin leaves. Its quantity should be about 6 to 10 times the size of all the other ingredients when added together
PREPARATION OF THE VEGETABLE SAUCE
- Heat up the stove or electric cooker
- Place the frying pan or cooking pot you intend to use for making the vegetable sauce on the stove
- Once the water in the pot dries up. Add vegetable oil or any type of oil you want to use.
- Once the oil gets hot, pour the sliced onions and stir them.
5. Pour the sliced spicy pepper and stir
6. Pour the sliced carrots and stir together
7. Pour the sliced sweet peppers of three different colours and stir everything together
8. Add a small quantity of black pepper and salt to the ingredients in the pot

9. Add the ground crayfish and 1 cube of Maggi or knorr and stir properly until everything mix up.
10. The next and last thing to add at this point is the sliced leaves.

Pour it into the pot and stir for about 2 minutes until everything mixes properly with the leaves.
At the point of bringing the pot down from the stove, the leave and the other ingredients should have a cooked look.
The whole time of making this vegetable sauce should not exceed 10minutes under moderate heat because the ingredients don’t need to be overcooked. The time interval of adding a new ingredient should not exceed 1 minute each.
After adding the sliced vegetable leaves, you shouldn’t allow it to stay under heat for more than 3 minutes and you must be stirring it with other ingredients in the pot during the period.
