Buy the following ingredients:
- 1 packet of spaghetti noodles
- Frozen chicken laps
- Groundnut oil
- Fresh tomatoes or tin tomatoes
- A small number of fresh pumpkin leaves, green beans, and carrots,
- 1 big onion
Start by breaking the spaghetti noodles into tiny pieces to get the size you prefer, wash it properly in clean water pour it into a grater to allow the water in it to drain.
Place a pot with water in it on your stove and start heating. When the water starts boiling add spaghetti into the boiling water.
Allow the spaghetti to boil for the next 8 minutes. Bring it down and drain its water by pouring it back to the grater.
Wash the frozen chicken and cut it into the sizes you want.
Steam the frozen chicken in a small pot. Add a half cube of Maggi into it, a small number of sliced onions, little pepper and enough salt. Allow it to steam until the meat is almost 90% cooked.
Bring down the chicken pot and drain the water in the meat by placing it in a small grater or porous bow.
Blend your fresh tomatoes. if you are using the tin tomatoes no need it is ground already.
Slice the vegetables you want to use, the onions, and blend the crayfish.
Position your cooking pot on the stove to fry the cooked chicken with the same quantity of groundnut oil that will be used for the Jollof spaghetti.
Once the chicken appears dried and water-free in the oil, bring it out and proceed to the next step.
Now you have only the groundnut oil on the stove, add your sliced onions and a little salt then pour your tomatoes into the oil.
Allow the tomatoes to dry in the oil as though you are making stew. Then add the fried chicken back into the pot. Add small water and start adding all the ingredients such as pepper, crayfish, and Maggi cube. Also, add all the vegetables you are using at this stage.
Stir the pot to ensure everything blends together. Then proceed to pour the boiled spaghetti noodles.
The moment you add the boiled spaghetti noodles, you need to start turning everything in the pot to ensure it blends with the noodles. At this stage, only small is in the pot any delay in turning could make the spaghetti to burn beneath the pot. Immediately you add the boiled spaghetti and stir everything for about a minute, the water in the pot supposed to have dried except if you used too much water.
Bring down the pot from the stove and serve your Jollof spaghetti.
